Manilla Clams in Minutes

2 lbs Manilla Clams
2 cups dry white wine
2 cloves garlic minced
1 shallot chopped
4 tbsp butter
1 tbsp each parmesan and parsley

Scrub your Manillas with a stiff brush, focusing on the seams, discarding any that are open.  Add the wine, garlic, shallots, butter and (lastly) the clams to a heavy pan with a lid and cook them over medium heat for 5-7 minutes.

With a slotted spoon, remove all of the opened clams to serving bowls.  You can cook any unopened clams for a bit more, but if they still don't open, just discard them.  Strain the broth through a strainer covered in cheesecloth and pour over the bowls of clams.  Sprinkle the cheese and parsley over the tops and serve with warm garlic bread for dipping.  We feel warmer already!
