Pan-seared Arctic Char
This is a quick and easy dinner for any night of the week, and it will make you look like the rock star chef that you are! Prep time is only about 15 minutes, perfect for busy work nights (double the recipe as necessary).
1.5 lbs Arctic Char
Salt and Pepper
1/2 Tbsp Olive Oil
1/2 cup White Wine or Dry Vermouth
2 Tbsp Cold Butter
1 tsp Lemon Juice
1/2 Tbsp Capers (drained)
Preheat your broiler.
On our Arctic Char fillets, there's just one line of bones running down the center of the fillet. Use tweezers to simply pull out the bones.
Season the Arctic Char with salt and pepper and let sit unrefrigerated for 10-15 minutes while you start your side dishes. Then place 1/2 tblsp good Olive Oil in an oven-safe pan on high heat until it shimmers. Place the fish in the pan skin side down and cook for 1 minute. While cooking, tilt the pan to pool the oils and use a spoon to pour them over the flesh of the fish. After 1 minute, place in the broiler and cook until desired doneness (between 3-6 minutes). Just keep an eye on it, that broiler can work pretty fast!
While your fish is in the broiler, in a small sauce pan add the white wine and cook on medium heat until the sharp alcohol smell subsides (about 2-3 minutes) and the wine is reduced to about 1/4 cup. Turn the heat off and start adding the cold butter 1/2 Tbsp at a time, swirling it in with the wine slowly. If the mixture gets too cool, turn on the burner at very low heat, just don't let the mixture boil. Repeat until the butter is all melted, and then stir in the lemon juice and add the capers.
Place the fish on the plate, add your lemon caper sauce and get ready to dazzle!
