Pineapple Salmon Skewers

I’m so excited to be part of the team and to hang out with all the sea creatures that come into the office.

After seeing so much fresh seafood I was inspired to put together this easy and tasty recipe for the 4th of July.

What says summer better than a grill-out and some tropical fruit?


Pineapple Salmon Skewers


Loki's Wild Salmon fillets come frozen. Perfectly easy to thaw for grillouts now and later.

2 cups pineapple juice

½ cup lemon juice

Zest of half a lemon

1 tbs cumin

1 tbs cinnamon

3 tbs brown sugar

Salt and pepper to taste

1 ½ lbs Wild Alaskan salmon

Goes great with grilled pineapple, green peppers, and red onion.


Combine the pineapple juice with lemon juice and let the salmon marinade for a minimum of 2 hours. Once the fish is marinade, you can prepare the rub. Combine the cumin, cinnamon, and brown sugar, plus salt and pepper in a bowl. Cut the fish into even sized pieces. Coat the marinated salmon with the dry rub first to avoid uneven coating. Lastly, add the lemon zest onto the fish and grill. To be safe I would grill the fish and veggies on separate skewers since they will need to be on the grill for different amounts of time.
