If you only read this sentence, you need to know there is no such thing as ‘sashimi-grade’ fish. Or ‘sushi-grade’ fish. These terms imply fish has been ‘graded’ and passed some level of quality according to a method of measure. This is not the case. There is currently no such certification or ranking in place.  We use the term ‘sushi-quality’ to denote that our seafood is fresh is enough to eat raw but has not undergone any sort of nonexistent certifications.
With all the talk of sushi-grade and sashimi-grade fish, why isn’t anyone speaking up and letting people know that the truth? I think that most people don’t really know and don’t really care to know. Out of sight, out of mind could not hold truer for the seafood industry. The oceans are currently in ‘a state of silent collapse’ according to recent scientific reports yet people continue to eat unsustainable choices, such as, bluefin tuna, farmed salmon, Chilean sea bass, and orange roughy. In the same regard, people don’t care how their sushi got in front of them so long as it’s tasty and inexpensive.  Why should you care? Well, it’s up to us as consumers to change the industry by demanding complete transparency as to the species, catch location and catch method.
Part of bringing the truth to the seafood industry is exposing the nefarious and rapacious activity that is so prevalent. Are you disenchanted with the fact that some companies in the seafood industry are destroying oceans that belong to everyone? Are you willing to voice your opinion with your pocketbook?
