California Albacore / Thunnus alalunga
Albacore is a Tuna and a member of the Mackerel family, Scombridae. This “torpedo” shaped fish is boneless and skinless and an excellent choice for those who adore tuna but are concerned about the state of the oceans. Physical Description
When raw, the meat ranges from tan to light pink. The meat is less dense than the Yellow Fin and Blue Fin.
