Pagrus auratus
Our beautifully fresh Tai Snapper hail from the well-managed fisheries off the coast of New Zealand. This extremely versatile fish is a staple at most sushi restaurants, and also lends itself well to a variety of other preparation techniques. Tai is associated with the Japanese word medetai, symbolizing an auspicious event - so be sure and have at least one on hand for your next celebration!!
Sustainably Sourced
Tai snapper are caught using a bottom longline. This method involves a series of hooks strung along a fishing line with weights attached so that it sinks to the seafloor once deployed from the fishing vessel. This method has less sever impact on ocean habitats and is relatively selective for the target species and generally results in minimal bycatch of other species.
