Fanny Bay Oysters / Crassostrea gigas
Fanny Bay oysters were one of the first British Columbia oysters to become widely available, and they’re still considered the archetypal BC oyster. Cultured on the beaches of Baynes Sound near the town of Fanny Bay, they start out in trays suspended from the surface to hasten their initial growth, after which they are transferred to the intertidal area to develop their nice cup and thick shells.
Physical Description
Approximately up to 3 inches in size. Deemed one of the prettiest oysters with its ivory shell and petticoat-like fluted edge.
Catch Method
Raised in Fanny Bay off the coast of Vancouver Island.

Flavors: mild brininess, smooth with a pronounced cucumber finish
