The salmon is then brined in honey and salt, and then garlic and pepper are added. It’s lightly hot smoked with an alder wood blend. This gives it a balance of sweet and savory smokiness and the pepper and garlic give it a spicy depth. Try making a dip out of this with cream cheese and dill, and serve with rye toast rounds. It’s also delicious in a smoked salmon and corn chowder.
