Kusshi Oysters / Crassostrea gigas
To you lovers of Kumamotos, we offer Kusshi’s. Still a rarity on East Coast menus, Kusshi’s are all the rage on the West Coast due to their small size and delectably clean flavor. These little gems are grown in floating trays that tumble over and over with the tides. This causes the thin growing edge to break off yielding a deep cup and uniquely smooth shell. The resulting oyster is called a Kusshi, Japanese for “ultimate.” Find out for yourself why!
Physical Description
Has a deep cupped shell that is almost as deep as it is long, just over 2 inches. The unusual cornucopia shape and stunning smooth purple-black shell are due to the tumbling, which smoothes off any frills.
Catch Method
Raised in the pristine Deep Bay waters of Vancouver Island, British Columbia.
