  • Tombo is the name for Hawaiian albacore tuna, rated “Best Choice” for albacore tuna by the Monterey Bay Aquarium Seafood Watch. Giovanni’s Fish Market sources their tombo direct from one of Hawaiian best-managed fisheries, sustainably caught in the tropical waters using pole-and-line. This method of fishing targets smaller albacore with lower mercury levels, giving consumers the full health benefits of tuna.
