  • Pronounced “gooeyduck”, geoducks are the largest burrowing clam in the world, and can live for up to 100 years. Taylor Shellfish farm their geoducks at 5-7 years old.

    These impressive stats have made geoducks a delicacy around the world, with a rich history in the Pacific Northwest.

    The neck meat contains a mild flavor and crisp “crunchy” texture of a cucumber and is best eaten raw sashimi-style or in a ceviche. The body or belly meat has a slightly more mild, subtle flavor. Try it fried or in a traditional Chinese hot pot.
